if possible at the Central Station. My family and I will be arriving from Paris using the Thalys train, if not where is the nearest?

At central station there is no availability for 6 or 7 car, the only location is Schiphol for a 7 seater mini bus. By train its only a 10 min ride with direct connection to Schiphol from central station. But it's the only opportunity as it is very busy with Kings Day in the Netherlands.

I will look into that option and maybe take a train to Schiphol to collect the car, and do the return as well

Yes, if you want to be sure to have at least that opportunity, then book it, you can always cancel 24 hours prior to pick up for free.

On the other hand, is it more economical to have 2 cars instead of a 7 seater? There are 2 drivers, for this option, I can always get 2 cars directly at the Central Station.

Then thats a better and cheaper solution. Pick up at Central Station are located few minutes walk from the station. Again, don't wait too long...book to be sure at that price as they will go up. You can always cancel.
